Tahini Chocolate Chip Cookies With Maca & Mushrooms

So many of you have been telling me how hard sticking to a healthy diet has been while in quarantine and oh my god I couldn’t agree with you more. Whether its boredom, stress or your kid yelling mommy ten thousand times in a row- fighting off urges for all the sweet, salty, crunchy goodies hasn’t been easy.


That is where recipes like this come into play…..

Sweet enough to satisfy your cravings but healthy enough to eat for breakfast


You can enjoy these cookies with your morning coffee or as an afternoon pick me up with zero guilt and they will last for up to a week (if you don’t eat them all in one day like we did)


They are also GF, DF, egg free, peanut free and have a few magical healthy ingredients that I just love to sneak into my recipes.

Tahini Chocolate Chip Cookies with Maca & Mushrooms:


Ingredients:

3 cups unsalted organic chickpeas

1/2 cup organic Tahini

1/2 cup organic Cashew butter

1/3 cup Lakanto monk fruit maple syrup

1 tbsp organic vanilla

1 tsp baking soda

1 tbsp flax oil or avocado oil

1/2 tsp pink Himalayan salt

1/4 cup Maca

1 heaping tbsp Sun Potion Chaga mushroom powder

1/2 cup semi sweet dark chocolate chips


Directions:

Combine everything except the chocolate chips in a vitamix or a food processor and blend on medium until fully mixed. Use a spatula to push the mixture down to make sure everything mixes nicely - it should be THICK ;)

Pour mixture into a bowl and fold in chocolate chips.

Line a baking sheet with parchment paper and scoop on the cookies with a tablespoon.

Bake at 350 for 20-25 minutes then remove and let cool.

Thats it - so easy, so tasty and so healthy!
