High protein pancakes that will keep mama going all day long!
When the weather changes and it gets cooler outside I tend to start craving this amazing and easy recipe for oatmeal pancakes. The high protein and fibre keeps you full all the way through your morning and if you prepare extra they are perfect to stash in the fridge for snack.
I would consider them to be an all star breakfast for the mama on the go.
You will need:
1/2 C Rolled Oats
2 Egg Whites
1/4 C Milk (soy, almond, original whatever you prefer)
1 Tsp Vanilla
1/2 Tsp Cinnamon
Pinch of Salt
To Prepare:
This is actually the easiest recipe ever!!!
Combine all ingredients in a bowl and let sit for about 5 minutes
Cook over medium heat for approximately 4 minutes or until golden brown on each side, you can make the pancakes as big or little as you wish. (I would say I usually make them roughly 1/4 c each and I kind of form them into a circle with a wooden spoon once they are in the pan.)
Serve with almond butter and honey or your choice of topping and a side of fruit and you are all set!
